Futomaki & Tofu Soup
These were Futomaki and Tofu soup.
Sometimes suddenly I miss Japanese flavors such as seasoned vinegar for sushi rice, sweet-soy sauce for dried Shiitake mushroom, Koya-dofu (freeze-dried Tofu), and Kanpyo (dried shavings of calabush (a kind of gourd)), or simple Japanese soup base, or Dashi. This dinner certainly cheered me up!
This was an almost oil-free meal. I used only half a teaspoon of peanut oil to cook egg. The rice and Tofu were filling, but overall the meal was light and made me feel so good!
