Classic Meat Sauce with Tagliatelle

Classic meat sauce with ground beef and a lot of onions and carrots! After simmering 3 hours, the sauce has become silky. It met chewy but tender tagliatelle and a snowy mountain top of Parmigiano-Reggiano. It was a unquestionably comfort dinner.
