Dark Chocolate Mint Ice Cream
This was dark chocolate mint ice cream.
Since we made delicious minty green tea chocolate chip ice cream, our fresh mint has been growing back so quickly, enough to make minty ice cream again. I adapted a recipe of Jeni's dark chocolate ice cream, replaced all sugar with agave syrup like before, and added more fresh mint leaves than before to highlight mint flavor in strong dark chocolate.
The result was super rich chocolaty and minty ice cream. It landed on a pretty bitter side of bittersweet, which could stem from a lot of (1/2 cup!) Dutch cocoa powder, 71% French dark chocolate, strongly brewed coffee, or mint, or all of them. A couple of scoops after dinner was perfect to complete a summer day!
