Father's Day Celebration with Surf & Turf
This was a Surf & Turf dinner to celebrate Father's Day!
J's parents visited us and brought many kinds of appetizer! Two kinds of cheese, two kinds of dipping, veggies, cure meat, mini toasts, etc. They looked so nice on J's mother's beautiful pottery plates, and of course, tasted very good! Right after nibbling these goodies, we couldn't believe we were going to have dinner.
Well, no worry. Magically another couple of hours later, our appetite came back and we were ready for dinner. For surf, we chose golden rainbow trout. How beautiful they were!
We smoked bacon-wrapped rainbow trouts before and it turned out very well. Bacons kept the fish moist and added nice flavors. On the other hand, I wasn't impressed by the stuffing inside of the fish, which was a mixture of celery, green bell pepper, and crackers and got mushy after smoked. So, we marinated fish with lemon juice, garlic, olive oil, Worcester sauce, salt and pepper like the last time, but stuffed the inside with our garden herbs and lemon slices. Look! They were wonderfully smoked!
The turf part was J's mother's hand-cut Filet mignon. Each piece was ridiculously thick! The steaks were also wrapped with bacons, and charcoal-grilled after the fish was done.
What a great day for cookout! We also served corn and potato salad. Everything was absolutely delicious! Who could believe a dessert was waiting for us?
