Sushi-rice, Tofu and more
This was Japanese vegetarian healthy dinner:
- Sushi rice with dried Shiitake mushroom and Kanpyo (dried shavings of gourd) that were cooked in a traditional way
- Pan-fried Tofu balls, Ganmodoki, which means "pseudo-goose" made for people on vegetarian diet who should not consume meat. Ganmodoki is usually deep-fried, but I pan-fried them. I mixed carrot, mushroom, Wakame (a kind of seaweeds) in tofu balls.
- Steamed eggplant with fresh ginger and chive, Mushi-Nasu
- Spinach mixed with crashed Tofu and grounded sesame, Hourenso-no-Shiroae
Vegan, almost oil free (I used only tiny bit of vegetable oil to pan-fry Tofu balls. That's it!), rich in good protein, and delicately DELICIOUS! These simple foods reset my taste buds which have been getting used to well-spiced, rich and bold flavored meals.
