Spanakopita, the 3rd
This was my 3rd homemade Spanakopita, or Greek spinach pie.
Like the last time, I followed the recipe by Cook's Illustrated, using sour cream instead of whole milk Greek yogurt that I couldn't find at a local grocery store. This time I used the leftover Filo sheets in the freezer. I needed 10 sheets for the bottom and 8 on the top of the fillings. So total 18 sheets. I had only 16. So, there were only 6 sheets for the top layers. Would we notice the difference made by missing two super thin Filo sheets? I didn't think so. After baked, it looked just fine. For dinner, 8 blocks per person would be a little too much while 4 might be too small. 6 would be appropriate.
Ok, let's cut 6 blocks out. This way and that way. It was very tasty as usual.
