Home-Corned Beef Hash & Egg
This was home-corned beef hash and egg.
It was my first corned hash and egg to make. I adapted a recipe from Cook's Illustrated with a few changes, and used up all of the small leftover of home-corned beef and red potatoes from our Saint Patrick's day dinner. Although the recipe clearly mentioned "non-stick" pan, I started to heating a wrong pan - a heavy cast iron. I believe because of that, the brown parts of my hash stuck to the bottom of pan and burned sadly without making a crisp golden potatoes. J's perfect sunny side egg nicely covered my hash failure. The hearty classic breakfast tasted very nice. If there is next time, I will use a non-stick pan, though. I am sure there will be next time!
