Mystery Popovers

My last popovers were not-so-popped. I had suspected the old mix at that time but I started thinking that the batter, more specifically eggs in the batter were still too cold to pop even after 30 minute rest in room temperature. To prove the theory right, I made popovers again. This time I made sure the batter with eggs wasn't cold. Aha! I saw lovely popping!
Well, all popped but the term lovely were applied to only some of them. The rest was not so handsome: holes on top and/or straight-up-popping like a chimney... 
My ideal popover would have a cute, balloon-like lively popped head. The lovely ones were close to the dream. What happened with the rest?!
Every one looked different but all were tasty after all. Popovers are mystery for me.
