Stir-Fried Rice with Peruvian Chicken
Take-out Peruvian chicken dinner that we had the day before was plenty. There were leftover chicken and sides. The easiest makeover that I could think of was stir-fried rice. I diced all chicken and green beans and mixed them into my usual stir-fried rice. The result was pretty good, actually better than I expected. The well-spiced and quite salty chicken wasn't too salty in this form. Rather the strong savory flavor from chicken dressed up plain rice. Green beans weren't a stranger either. They became a nice friend of the team of stir-fried rice. The makeover was a big success!
