Stuffed Eggplant with Lamb & Pine Nuts

Another success from our favorite Jerusalem cookbook! Lamb stuffing was warm spiced with cumin, paprika and cinnamon. Plenty of pine nuts added a nice texture and flavor. Eggplants were tender and absorbed all deliciousness. It was a beautiful dish. We liked it very much!


There was one thing that confused me though. Eggplants weren't really "stuffed." The lamb and pine nut mixture was placed on the halved eggplant boat. I read the recipe at least five times. I didn't see any instruction to stuff the mixture in eggplants. I hope I did right.
