Veggie-oriented Beef Stew

It's getting cooler and it's a season that hot steamy soup/stew is appreciated. I thought that J would love hearty beef stew. I included diced braising beef in the recent online grocery basket. I guess I didn't check how much the beef was. A container was actually much smaller than I expected. What should I do? I made beef stew anyway. It turned into veggie-oriented beef strew. Probably over 75% of the stew was veggie. Maybe beef-flavored veggie stew was a proper name. It tasted fine and made us full. A happy ending after all.
