Kedgeree Updated
This was our latest homemade kedgeree! I am making this classic English breakfast dish for dinner about once a month with the same recipe. Well, I should say, almost the same recipe. The flavor or texture of smoked haddock might be slightly different because each fish could be different even though I always use one from Waitrose. The size of onion and/or the amount of butter or curry or both could be more or less. Actually I did something unusual this time. I used red onion instead of usual yellow onion. J said this was the best! Well, it is so sweet of him to say "this is the best" each time. Or maybe red onion actually made the dish the best of the best?
