Spinach Quiche
This was spinach quiche. I adapted a recipe from a great food blog Smitten Kitchen I often visit, which was apparently based on a recipe from Bon Appetite, October 1991.
With some little changes on the recipe, such as using low fat cream cheese & low fat milk, replacing Cheddar with Baby Swiss, adding Piment d'Espelette along with black pepper, etc, I fell in love with my quiche. It was fully packed with spinach and scallion, no mass of eggy heavy custard that I often find in the third party's quiche.
We quickly ate a slice of the quiche while it was still hot. Very tasty!
