Eggplant Parmesan 2

I was surprised at how fast time flied. I felt I just made Eggplant Parmesan a few weeks ago, but actually it was back in May.


I made bread crumbs from my homemade bread that I saved instead of eating for breakfast this morning. In my homemade marinara sauce, I added a lot of our garden herbs and a pinch of J's mother's mixed spicy pepper. Pasta beneath eggplant was Capellini that we always enjoy for this dish.
