Egg Salad & Cucumber Sandwich

This was Egg Salad & Cucumber Sandwich with homemade Pumpernickel bread.

I like egg salad that is flavored like tuna salad. Mayo, Dijon mustard, cornichon pickles, capers, chive, Espelette pepper, black pepper, sea salt were in my egg salad. On a sliced bread, spread a little bit of butter, placed a layer of sliced cucumber, and loaded egg salad, closed with another sliced bread. Rich egg salad and cool cucumber is my favorite combination.

Our savory Pumpernickel bread was a perfect match to the egg salad. With a cup of leftover roasted red bell pepper soup, the dinner was complete.
