Mulled Red Wine Chocolate Cake

This was Mulled Red Wine Chocolate Cake with whipped cream.

I am a repeater of Red Wine Chocolate Cake. It's always perfect - the recipe is failure-proof. The recipe calls for 3/4 cup of red wine. So whenever J opens a bottle, I look forward to 3/4 cup leftover. This was the time. But the Merlot had been mulled by J with mulling spices from Penzeys.

Ingredients of the mulling spices are cracked cassia, cloves, allspice, cardamon seed, and mace. So I skipped adding 1/4 tea spoon cinnamon to see how the mulled wine plays in the cake.

The cake was amazing as usual. We tasted some kinds of spices between cocoa and wine, which was very subtle but enjoyable. It was an interesting experiment.
