Homemade Sourdough Crumpets, again

These were homemade sourdough crumpets, again!

The sourdough starter I used this time has not been fed about 10 days. The result was as good as those made with a-day-before-fed starter and those made with a-week-ago-fed starter. They were light crisp outside and and chewy inside. They may not be like authentic crumpets, but who cares? They were ready to be breakfast within 30 minutes, and importantly tasty!
