Mini Chicken Piccata

Online grocery shopping has been handy and helpful, but sometimes I receive an item(s) that was not exactly what I expected. For example, mini chicken breast fillets were so "mini." I thought they would be a little bit larger according to the photo of the product. The size didn't change my plan to make Chicken Piccata, though. Actually small fillets were easier and quicker to pound with a meat hammer and coat with flour. They were cooked fast, too. The result was as great as a single large chicken cutlet. Plus, we could eat the dish with just a folk. I didn't need to wash extra knifes. Chicken Piccata with mini fillets? No problem. Rather, better!
