Veggie Couscous

When I mention veggie couscous, I usually see J's negative reaction. However, this time was different because I was going to use crushed tomatoes that J bought! Veggie couscous has been one of my favorite dishes although somehow J doesn't like it much. There are still two giant cans of crushed tomato in our pantry. I can obtain a buy-in from him for a while.
