Beef, Carrot & Potato Stew

Although there were no mushrooms, this beef stew was much like veggie-oriented beef stew that I made last fall - lots of carrots and potatoes. I would simply like to call the dish beef, carrot and potato stew. The next may be carrot and potato stew with beef flavor if J likes the idea. We'll see...
