Spinach & Goat Cheese Salad with Orange-Lemon-Mint Dressing
I like cheese and nuts on salad. This time we had goat cheese and pecan combination. Also for the salad in the bright Spring afternoon, I created a fresh salad dressing with naval orange that J's parents gave us, lemon, mint leaves and a little of Dijon mustard. I didn't add any vinegar that could make the dressing too acidic. The lovely citrus dressing went very well with creamy mild goat cheese and toasted nutty pecan.
