Pho-ish Noodles with Pork & Alfalfa
This was Pho-ish noodles with pork and alfalfa.
J and I were thinking how to eat the leftover cooked pork I made for ramen. J said, rice noodles with light soup. That sounded Pho. It could be difficult to create authentic Pho soup with limited ingredients in the kitchen. So I made something like Pho soup with beef stock and vegetarian soup stock. The soup was not too bad; the thin rice noodle I picked up at a local grocery was bad in both texture and taste.
To avoid old beansprouts at a grocery store, we used our home-grown alfalfa instead. That was actually fine. Overall, it was an alright attempt, I suppose.
