Rolled Flank Steak with Garden Herb Pesto
This was rolled flank steak with garden herb pesto.
This may be the best year that all herbs at the garden have been growing so beautifully. We have been making dinner with our fresh herbs while herbs are growing more and more. This dinner was J's great idea to consume as much herbs as possible. I made pesto with basil, parsley, oregano, and chive along with toasted pine nuts, pan-roasted garlic, Pecorino, and olive oil.
J pounded the flank steak evenly and spread pesto on the steak neatly. Thank you J!

I browned all over the surface and cooked the steak in the oven at 350 F for about 25 minutes.

After 5 minutes resting time, let's slice it!
Thicker parts were nicely done to almost medium, which was good for J. Thinner parts were cooked nicely more than medium, perfect for me. Pesto was very tasty with the steak. I made J's favorite potato salad as a side. We enjoyed the dinner very much!
