Smoked Tofu Gumbo
Along with smoked salmon, we bought a block of smoked tofu at Neopol. I thought I had made vegetarian gumbo with smoked tofu before, but actually it was with plain tofu. Instead I have made Tikka Masala with smoked tofu before. Anyway, this time I made Gumbo with smoked tofu. The tofu was really smoky and didn't have tough dried exterior like the smoked tofu we made, which J didn't like. This gumbo was great vegetarian with a lot of veggies: green peppers, celery, fresh okra, and onion cooked in toasty brown "roux" made with flour and peanut oil, tomato puree and vegetarian broth. I made a big pot enough for our three full meals. We liked the gumbo very much each of the three times.
