Rainbow Slaw
I named so. Then, when I searched rainbow slaw on Internet, hundreds of pictures popped up. Ok, mine wan't first. Under the name, purple cabbage seems a common rainbow pigment while a variety of vegetables like broccoli, cauliflower, corn, kale, etc can join to make a rainbow. My main vegetable was zucchini. Julienning zucchini, yellow bell pepper, carrot and radish with a slicer neatly and dressing them with vinegar and spices was a new way for us to enjoy summer zucchini.
