Whoopie Pie with Dulce de Leche

These were Whoopie pies with dulce de leche.

This was a solution to use the leftover dulce de leche from Banofee shortcake. Moist light chocolaty caky cookie sandwich with sweet gooey milky caramel filling, instead of original marshmallow filling that I made before. Why not?

The result wasn't WOW but fine. My finding was the cake cookies tasted much better on the next day of baking. The third day they were still very good too. I like such cookies' behavior. We can enjoy them with no rush!
