Black Bean Tacos, again
These were black bean tacos, again!
This time I adapted a recipe of Taco seasoning that I found online to make my own seasoning mix! Only one small change I made was skipping all salt in the recipe. We won't miss salt because some other ingredients had enough salt. For the black bean filling, I cooked a can of black beans, onion, orange bell pepper, low-sodium chicken broth and a few table spoons of commercial salsa together and seasoned it with the homemade seasoning mix. I bought a box of large hard corn shells. Toppings were shredded cheddar cheese, store-bought fresh guacamole, and homemade fresh tomato salsa. So easy and quick to cook and tasty but messy to eat!
