Egg Drop Soup, Kimchi, & Rice

This was egg drop soup that was served with Kimchi and steamed rice.

Egg drop soup was one of my quick-n-easy soup menu. I can make a cup(s) anytime! This day's dinner was developed based on Kimchi. J likes Kimchi from Honeycomb Grocer at Union Market. Of course, he bought a container of traditional Kimchi during our recent Union Market visit. Only Kimchi couldn't become a full meal. So I added rice and soup. Then our dinner became satisfying.    

This Kimchi tasted better than those at other times, we thought. Perhaps, a good timing of the fermentation, a good seasoning balance, fresher ingredients, or some or all of them. Anyway, we were lucky to get this particular Kimchi.
