Matcha Muffins
These were Matcha, or Japanese green tea muffins.
I was looking for a recipe to use two egg whites left from the wonderful thumbprint cookies and found a recipe online that exactly called for two egg whites and Matcha, one of my favorite Japanese tastes. I followed the recipe apart from the amount of Matcha. The recipe called for 10 g of Matcha powder but I added about 1 teaspoon of Matcha without measuring the weight. The recipe was very easy. Within a hour, there were 5 cute green muffins on the kitchen counter!
They were light, spongy and tasty. What a wonderful way to consume egg white leftover it was!
