J's Country Omelette with Spanish Chorizo & Garden Chive

This was J's country omelette with Spanish chorizo and our garden chive!

There were two mild chorizo that J invited from Spain to our house. The first dish with the chorizo was this beautiful golden omelette made by J. Little diced chorizo pieces were hidden in the egg pillow.

The chorizo added a nice sweet smokey flavor to egg. With our fresh garden chive that just started growing back after the winter, the omelette was a great hearty breakfast. Thank you J!
