Green Tea & Soy Milk Cake with Amanattou
This was Green Tea and Soy Milk Cake with Amanattou, or candied black beans. Obviously the theme was Japanese.
Good things about the cake were its nicely spongy texture without egg, butter, or refined sugar (well, I was talking about the cake part. Candied beans were candied with sugar.), beautiful green tea color and flavor, and rich in protein from soy milk.
It was similar to Green Tea, Black Bean, Soy Milk Cake, which was made with egg whites but without oil, but since this cake didn't contain egg white, it was not chewy at all.
I made this cake to finish up Amanattou that I made and froze a few months ago. But there was more Amanattou than I thought, and I could not use all. J will experience my Amanattou sweets at least one more time soon...
Green Tea & Soy Milk Cake with Amanattou
MAKES 1 loaf
150 g cake flour
10 g Splenda
2 tsp green tea (Matcha) powder
2 tsp baking powder
a pinch salt
175 ml soy milk
1/2 tsp vanilla extra
3 tbs vegetable oil
Handful frozen candied beans (Amanattou)
1. Shift flour, Splenda, green tea, baking power, salt together, and whisk well.
2. Add in soy milk and vanilla, mix gently and thoroughly.
3. Add in oil, mix gently and thoroughly, fold beans.
4. Pour into a parchment paper-lined pan.
5. Bake 340 F, about 30 min.
