Spinach Quiche, revisited
This was homemade spinach quiche.
The last spinach quiche was a little dry, but this was lovely creamy. For the filling, I adapted a recipe from Smitten Kitchen as usual with a little of changes. I skipped cream cheese and added some low-fat yogurt. I replaced half&half with low-fat milk plus two table spoon heavy cream. I used seven scallions. For the crust, I adapted a recipe from Cooks Illustrated, which always make a great flaky buttery pie without mess.
Actually the amount of scallion was the same as or maybe more than spinach. This was technically spinach and scallion quiche. I could name it the green quiche.
