Udon Noodle Soup with Tofu & Vegetables

This was Udon noodle soup with Tofu and vegetables.

Since we have been having rich meals recently, it was delightful to have a light dinner like this. I cooked broccoli in the soup too long and they almost (some totally) melted in the soup. It was an unexpected happening. Nonetheless I enjoyed this simple Japanese noodle very very much. Non-oil, non-meat, non-cheese!
