Zaatar Rolls
This was a Zaatar Roll.
Zaatar is a relatively new and mysterious spice mix for me who is a beginner of Middle Eastern foods. I bought a pound of Zaatar to make some dishes from my Jerusalem cooking book and was looking for a way to use more. Then, I found this recipe on a beautiful blog about Lebanese food recipes, Taste of Beirut. The recipe called for 1/2 cup of Zaatar. Great!
It was easy to make. Egg free, butter free. The rolls were lovely. The sour taste of sumac reminds me of salt-pickled Japanese purple Shiso. Interesting!
