Eggplant Parmesan

This was Eggplant Parmesan.

I didn't know the last time I made this dish was June. Time flies as usual. I followed the same recipe from Cooks Illustrated 2004 as usual.

Crispy oven-baked eggplant on Capellini pasta with homemade simple marinara sauce made us happy as usual.
