Tagliatelle alla Norma
I understand Pasta alla Norma, or pasta with tomato sauce and eggplant is a classic Sicilian pasta dish. So, my matching Tagliatelle, a type of pasta that is commonly made in Emilia-Romagna and Marche, Northeast regions of Italy, may be wrong. However, All I can say is this was really good! Tagliatelle was made by Cucina Al Volo at Union Market, which I kept in freezer a few weeks. For the sauce, I adapted a recipe from Cook's Illustrated again. Good pasta and good sauce made great pasta. No question.
