J's country omelette with Spanish chorizo, Cotija cheese & our garden chive

This was J's country omelette with Spanish chorizo, Cotija cheese and our garden chive.

He made this magnificent omelette in the morning of our wedding anniversary day. What a great and sweet husband! It was larger (6 eggs!) than usual. Of course, we shared it. Golden buttery exterior and pillowy soft interior with savory fillings. Delicious!

We had the lovely omelette with a couple of toasted bread that he bought at a local French bakery day before because he knows when I eat egg dishes, I need bread to eat with. What a thoughtful husband! It was a wonderful breakfast on our special day. Thank you so much J!
