Round Purple Eggplant Parmesan

This was round purple eggplant parmesan.

We picked up these eggplants at our local farm stand. They looked so cute and fresh. J suggested we make eggplant parmesan with them. I immediately liked his idea!
The recipe was the usual Cook's Illustrated's that doesn't deep-fry but bake eggplants. The method always works well!
Crispy baked eggplant slices were covered with two kinds of cheese snow.
Bake again until cheese melt and browned!
Angel hair pasta and homemade marinara sauce were going to be hidden beneath the layer of eggplant.

The eggplant was nicely crispy outside and wonderfully creamy inside. I have made eggplant parmesan several times while J said this was the BEST!
