Porcini & Chestnut Mushroom Risotto

 

Dried porcini is a keeper in the pantry so that I can make lovely risotto anytime. This time I also used some chestnut mushrooms that I saved in freezer. I don't think I have seen chestnut mushrooms in the US. They are cute chubby like button mushrooms and taste earthy but milder than portobello. They are my new favorite!
