Strawberry Cream Cake

Strawberry season has arrived! I made a whole strawberry cream cake or Japanese-style strawberry shortcake recently. Strawberry cream cake is probably one of the most popular desserts with strawberries in Japan. We call it "strawberry shortcake" although it doesn't look like classic American strawberry shortcake, which I also like. 

I used a new recipe for sponge cake part and the result was very good. Melt-in-your-mouth! Whipping cream is always challenging. The cream was a little bit over-whipped as usual. Anyway the cake was lovely. I enjoyed an extra large slice in the afternoon. I felt I could finish the whole cake but I knew I shouldn't.
