Tuscan Bean Soup

This was Tuscan Bean Soup.

I adapted a recipe of Tuscan Bean Soup from Cook's Illustrated with some changes. To make the soup vegetarian, I skipped bacon. To make the soup quickly, I used canned cannellini beans instead of dried. I also added white wine before adding soup stock and water. I used all kale that I had in the refrigerator. The soup became green soup rather than bean soup. The taste was fantastic after all!
