White Chocolate, Pistachio, Lemon Drop Cookies

These were white chocolate, pistachio, lemon drop cookies.

Based on a basic chocolate chip cookie recipe I found online, I made my own recipe of these lemony caky cookies. Using both white and brown sugar is common for chocolate chip cookies while I used only coconut sugar as little as possible. I replaced all purpose flour with cake flour. I added 4oz of chopped white chocolate and a handful of chopped pistachio. 1 stick butter and 1 egg. Lemon zest from one lemon, a couple of teaspoons of fresh lemon juice and a teaspoon of vanilla extract were for flavors. The result was about 20 cookies that were light and wonderful and couldn't keep away from J.
