Beef Stroganoff
This was beef stroganoff.
Finally I had a chance to say bye-bye to the leftover eye-of-round roast that has been in a vacuumed plastic bag in the freezer for several months. It's very lean cut. Although I tried to slice the roast as thin as possible and heated the slices quickly, they were a little tough to chew. The flavor was nice. The recipe was from Cook's Illustrated as usual. It called for sirloin steak tips, which would probably be fatter and tender. 1/2 cup of sour cream sounded too much. I used about two tablespoons. The recipe was for 4. So, I reheated the leftover next day. Beef got tougher. Still the flavor was nice. Particularly I was so happy not to see the beef in the freezer anymore!
