Herb Roasted Chicken Thighs with Potatoes


A bunch of fresh thyme and baby potatoes were sitting in the refrigerator. Eventually they met chicken thighs and move into the oven together. They got golden crispy and their flavors all merged wonderfully.


I roasted enough chicken as well as potatoes for two days. On the next day, leftover was reheated quickly and well. I was happy to be lazy. That was a big bonus!
