Linguine all'Amatriciana

The two slices of bacon leftover became a part of homemade Amatriciana sauce. The British bacon was smoked but not so smokey, which was a good substitute for Italian pancetta. The simple combination of bacon, tomato and onion with a little bit of garlic always generate one of our most favorite pasta sauce!
