Carrot Salad with Orange juice & Turkish seasoning
This was Carrot Salad with Orange juice and Turkish seasoning.
It was my made-up using whatever I had in hand. We often have green leaf salad. I thought this bright orange salad was a nice change, but wasn't sure what kind of reaction I would see from J. At the end, luckily J enjoyed it very much!
Carrot Salad with Orange juice& Turkish seasoning
SERVES 2
2 small carrots, shredded
6-8 cherry tomatoes, quartered
a handful of dried currant
fresh orange juice, from one navel orange
1 tbs apple cider vinegar
a dash of Turkish seasoning (mix of salt, garlic, cumin, black pepper, oregano, paprika, sumac, cayenne pepper, and cilantro)
a dash of ginger powder
fresh ground black pepper
a handful of roasted pistachio, finely chopped
1. Mix every ingredients but pistachio. Chilled in the refrigerator until serve.
2. Just before serving, toss pistachio in the salad.
