Smoked Salmon & Epoisses de Bourgogne on Filone

Our favorite breakfast - smoked salmon & Epoisses de Bourgogne, J's favorite cheese on slices of my Filone.

It is said the French cheese was created in the 16th century by the local monks. Since the monks were vegetarians, this cheese was a substitute of meat because of its full and rich meaty flavor. Its signature orange washed-rind stems from hand-washing the cheese in brandy which adds pungent but elegant aroma. 
The cheese has a very smooth velvety texture. When we bought the cheese first time, we took it from the small wooden box. When the cheese warmed up in the room temperature, it dramatically collapsed and started running out of the cheese board. Lessons learned. Now we scoop the cheese from the box neatly.

We love cheese and try various kinds of cheese for fun while Epoisses de Bourgogne is our top choice. We are fortunate to meet this beautiful cheese!
