Rustic Potato & Leek Soup
Our slow cooker book has a lot of recipes with chicken and meat, but this was a recipe without them. Just vegetables - potato, leek, onion and carrot. It was amazingly delicious! I loved the soup! Caramelized onion and leek with a couple of table spoons of butter and about 1/3 cup of heavy cream made the soup rich as if bacon was hidden.
