I don't remember what made J want beef tacos while this dinner was according to J's request. Not black bean or chicken or pork, but beef. Classic ground beef tacos! I adapted a recipe for beef taco filling from Cook's Illustrated. Toppings were lettuce, homemade fresh tomato salsa, Mexican cheese mix, and commercial guacamole. I was going to serve diced avocado but I couldn't find any ripen avocado at a local grocery store. The commercial guacamole wasn't too bad actually. All toppings and beef filling were carefully loaded on crunchy corn shells. The tacos were tasty and my hands were messy.
