Japan 2019 - Hijiki Seaweed, Chilled Fresh Tofu & more
The black dish was delicious Hijiki seaweed cooked with carrots and fried Tofu. It was one of many Japanese dishes that my mother kindly made for me during my stay there because she believed that I have't had them in England and that I have missed them. She was absolutely right!
Tofu is available in the US and UK and those are fine; however, Tofu made with special soy beans, water, and Nigari (a natural Tofu coagulent) according to a Japanese traditional method is excellent in terms of taste and texture. This chilled fresh Tofu was such a Tofu. With some garnishes like scallion, Shiso, ginger, and dried bonito and a little bit of soy sauce, I could eat the Tofu everyday.
